Kali ini aku mencoba penambahan pengunaan tepung, cairan dan baking powder, namun dengan jumlah telur yang tetap. Namun kali ini aku nga pakai susu UHT tapi pakai susu kental manis. Ini resep dan komposisi bahan yang aku modif:
Bahan:
5 eggs (6 butir)150 sugar (180 gr)
100 gr flour (110 gr, protein sedang, ex. segitiga biru dan 40 gr coklat bubuk)
1/2 sdt emulsifier
25 gr cornstarch (30 gr maizena)
1/2 tsp baking powder (1 sdt baking powder)
50 ml milk + 1 tsp vanilla extract (70 ml susu cair, 1 sdm susu kental manis, dan 3 tetes esen coklat)
1 sdt peres agar-agar (sebaiknya pudding vanilla: 2 sdm)25 gr cornstarch (30 gr maizena)
1/2 tsp baking powder (1 sdt baking powder)
50 ml milk + 1 tsp vanilla extract (70 ml susu cair, 1 sdm susu kental manis, dan 3 tetes esen coklat)
50 gr butter, melted (70 ml minyak goreng)
Cara membuat:
Beat eggs and sugar over hot water until mixture is thick, and pale for about 5 mins on high until Ribbon stage. The bubbles should be very very fine. Sift flour, cornstarch and baking powder together. Fold in flour mixture in 3 additions, alternating with milk.Lastly, put some batter into the melted butter, and combine. Put the buttered batter back into the main batter and fold to combine. Pour batter into a 8 or 9 inch round pan (bottom lined). Bake in a preheated oven of 170/180C for 30-35 minutes. Overturn cake for 2 mins after removal from oven and turn it upright again. Loosen sides from pan and remove from pan for total cooling.
Hasilnya: cakenya padat, mungkin pengunaan terigunya terlalu banyak, sepertinya cukup 100 gr aja. Cakenya juga kurang manis, lain kali aku akan coba pakai susu UHT, 200 gr gula, dan 100 gr terigu dan baking powder diganti baking soda, Analisanya baking soda akan bereaksi membentuk gas karbondioksida jika bereaksi dengan asam spt susu, cuka, atau buah, tapi 1/3 resep aja, ntar gatot lagi.
